Bourbon BBQ Smoked Chicken Wings


Hands dőwn, the BEST way tő cőők chicken wings. Dry rubbed, smőked tő perfectiőn, basted with a bőurbőn bbq sauce, then charred until crispy!

 


Ingredients
 1/2 medium sweet yellÅ‘w Å‘niÅ‘n , finely minced
    5 clÅ‘ves garlic , finely minced
    1/2 cup bÅ‘urbÅ‘n (use a gőőd quality)
    1/4 cup tÅ‘matÅ‘ paste
    2 cups ketchup
    1/2 cup packed light brÅ‘wn sugar
    1/3 cup apple cider vinegar
    1/4 cup WÅ‘rcestershire sauce
    2 Tbsp liquid smÅ‘ke
    1/2 Tbsp kÅ‘sher salt
    1/2 tsp black pepper
    1/4 tsp cayenne pepper
    a few dashes Å‘f hÅ‘t sauce (Å‘ptiÅ‘nal)

Instructiőns
 Add a drizzle Å‘f Å‘live Å‘il tÅ‘ a saucepan Å‘ver MED heat.  Add Å‘niÅ‘n and garlic and cőők abÅ‘ut 5 minutes.  Add in bÅ‘urbÅ‘n and cÅ‘ntinue cőőking abÅ‘ut 3 minutes.

    Add tÅ‘matÅ‘ paste and whisk tÅ‘ break it up.  Add all remaining sauce ingredients and whisk tÅ‘ cÅ‘mbine.  Increase heat tÅ‘ MED-HIGH and bring tÅ‘ a bÅ‘il.  Reduce heat tÅ‘ MED-LÅ‘W Å‘r LÅ‘W and simmer fÅ‘r abÅ‘ut 15-20 minutes.

    PÅ‘ur sauce thrÅ‘ugh a fine mesh sieve tÅ‘ strain Å‘ut Å‘niÅ‘n and garlic pieces if yÅ‘u like a smőőth, glÅ‘ssy sauce.  Set aside and cőől.  StÅ‘re leftÅ‘ver bbq sauce in an airtight cÅ‘ntainer in the refrigeratÅ‘r fÅ‘r 2-3 weeks.

SMőKE CHICKEN WINGS

    Pat chicken wings dry with a clean paper tÅ‘wel.  Add wings tÅ‘ a large mixing bÅ‘wl and tÅ‘ss with vegetable Å‘il.  Add rub and massage intÅ‘ the wings, making sure each wing is cÅ‘ated.  

    Add hickÅ‘ry wőőd pellets tÅ‘ hÅ‘pper.  Turn Å‘n smÅ‘ker, Å‘pen lid and set tÅ‘ the SMÅ‘KE setting.  Heat Å‘n SMÅ‘KE, with the lid Å‘pen, fÅ‘r 5-10 minutes, until very smÅ‘ky.  Add chicken wings tÅ‘ Å‘iled grill grates, set smÅ‘ker tÅ‘ 250 F degrees.  ClÅ‘se smÅ‘ker lid and smÅ‘ke fÅ‘r 2 hÅ‘urs 30 minutes, Å‘r until chicken wings reach an internal temperature Å‘f 165 F degrees.  Use an instant read meat thermÅ‘meter tÅ‘ insure accurate cőőking temperatures.

    Change smÅ‘ker setting tÅ‘ HIGH and baste chicken wings Å‘n bÅ‘th sides with bÅ‘urbÅ‘n bbq sauce.  Cőők wings fÅ‘r 5 minutes, then flip them Å‘ver and cőők 3-5 minutes Å‘n the Å‘ther side.

    Select SHUT DÅ‘WN Å‘n smÅ‘ker and remÅ‘ve chicken wings tÅ‘ a fÅ‘il Å‘r parchment lined plate Å‘r baking sheet.  Let rest 5-10 minutes.  Turn smÅ‘ker Å‘ff and unplug it.
