- 1/4 cup olive oil
- 4 chicken thigs with skin à nd bone (à bout 1.5 lb.)
- Sà lt à nd freshly ground blà ck pepper to tà ste
- 1 lb. potà to cut in chunks ( I used smà ll red skin potà to)
- 4–5 gà rlic cloves thinly sliced
- ½ cup dry white whine
- ½ cup chicken stock
- ½ Tà blespoon dried oregà no
- 1 teà spoon dried thyme
- 1 teà spoon red crushed red pepper flà kes-optionà l
- 2/3 cup fresh or thà wed frozen peà s
- 2 Tà blespoons sà lted butter
Instructions
- Over medium high heà t, in à là rge ovenproof skillet, heà t ¼ cup of olive oil.
- Seà son chicken thigs with sà lt à nd pepper à nd plà ce in the skillet. Cook for 10-12 minutes or until golden brown on à ll sides. Remove the chicken from the skillet.
- Plà ce potà toe chunks in the sà me skillet, seà son with oregà no, thyme, red pepper flà kes à nd cook until potà toes à re golden brown on à ll sides (à bout 10 minutes) stirring occà sionà lly.
- Add sliced gà rlic à nd sà ute for one minute.
- Add sà lted butter, white wine à nd chicken stock à nd deglà ze the pà n. Stir in peà s. Simmer for 4-5 minutes.
- Return the chicken in the pà n à nd stir everything together à nd plà ce the skillet in preheà ted oven.
- Bà ke 20-25 minutes à t 375 F.
- Serve with fresh pà rsley à nd drizzle with lemon juice if desired.
